Shanghai Chicken Wings

2 to 3 pounds chicken wings
1/3 cup water
1/3 cup soy sauce
2 tablespoons brown sugar
1 tablespoon dry sherry
1 teaspoon ground ginger or 2 slices fresh ginger root
Combine all ingredients in a large cooking pot. Bring to a boil. Reduce heat, cover and simmer 20 minutes. Stir occasionally to give all wings equal turn in liquid. After 20 minutes, remove lid, increase heat slightly and continue cooking for about 15 minutes. This is when the magic happens. The liquid will change to a thick and beautifully rich glaze. Toss wings to ensure even glazing. Serve hot or cold. Makes about 18 to 24 appetizers.
