1/2 cup hot pepper sauce
1/3 cup butter, melted
1 1/2 pounds skinless, boneless chicken thighs or breasts
Lettuce leaves
Blue cheese salad dressing (optional)
Recipe
Combine hot pepper sauce and butter. Mix well. Reserve 1/3 of mixture. Pour remaining sauce over chicken. Cover and chill for 20 minutes.
Meanwhile, heat grill. Arrange chicken on oiled rack. Discard marinade. Grill over medium heat on both sides for 10 minutes, or until done.
Heat reserved sauce. Cut chicken into bite-size pieces. Toss in warm sauce. Arrange on lettuce leaves on serving platter. Serve with blue cheese salad dressing to taste.
Serving quantity: Serves 4.
