Cheese Truffles

8 oz. cream cheese, softened
½ c. finely shredded Monterey Jack cheese
1/8 t. cayenne pepper
2 to 3 oz. Gorgonzola cheese or smoked Gouda cheese
Garnish: chopped dried cranberries, dried parsley, paprika, poppy seed, chopped pecans
Recipe
Blend cream cheese, shredded cheese & cayenne pepper. Cover and chill for one hour. Cut Gorgonzola or Gouda cheese into 30 small cubes. For each truffle, form a scant 2 teaspoonfuls of cream cheese mixture into a ball around the cheese cube. (If mixture becomes too soft to handle, return to refrigerator.) Roll truffles to desired garnishes, chill until serving time. Makes 2 ½ dozen.
