Cheesy Chile Squares

4 tablespoon butter
5 eggs
1/4 cup flour
1/2 teaspoon baking powder
1/8 teaspoon salt
Dash cayenne pepper
2 (8 ounces) cups Monterey Jack or Cheddar Cheese
1 cup small curd cottage cheese
1 (4 ounce) can diced green chilies, drained
Recipe
Preheat oven to 400 degrees. Melt butter in 9" square baking pan in oven. In large bowl, whisk eggs until well blended. Stir in flour, baking powder, salt and cayenne pepper. Tip baking pan to coat bottom and sides. Then add the melted butter to egg mixture. Add Jack and cottage cheeses, and chilies, and blend well.
Pour mixture into buttered pan and bake 15 minutes. Reduce oven temperature to 350 degrees and bake 30-35 minutes longer, until top is lightly browned and a knife in center is clean. Let cool on a rack at least 10 minutes. Cut into 1-1/2 inch squares.
Can be made in advance, covered and refrigerated up to 2 days. You can also freeze this. Serve warm or at room temperature.
