12 oz. thinly sliced deli roast beef
3/4 Cup dried tart cherries
2 Tbls water
8 oz. soft cream cheese
1/4 Cup prepared horseradish
4 large flour tortillas - 10"
2 cups fresh spinach leaves (about 20 leaves)
Recipe
Combine cream cheese and horseradish, mixing well. Spread cheese mixture evenly over one side of each tortilla, top each with an equal amount of cherries. Arrange deli roast beef over cherries leaving 1/2" border around edges. Place spinach leaves over beef. Roll up tightly, wrap in plastic wrap. Refrigerate at least 30 minutes or up to 6 hours before serving.
To serve, cut each roll crosswise into 8 or 10 slices. Arrange on serving platter and enjoy!
