    Gorgonzola Stuffed Mushrooms

    4 tbsp. butter
    1 / 4 med. yellow onion, finely minced
    2 cloves of garlic, finely minced
    1 / 4 c cream sherry
    1 c Italian bread crumbs
    1 c crumbled Gorgonzola cheese
    12 - 16 medium mushroom caps

    Recipe



    Melt butter and sauté' onions and garlic just until onions are clear. Add sherry and bread crumbs. Mixture should be moist enough to hold together. Add to Gorgonzola and mix well. Place mushroom caps in shallow baking pan. Spoon stuffing into caps, heaping generously. Bake in 375-degree oven for twenty minutes. Remove to serving plate and garnish with flat Italian parsley.
