1 pound shrimp, peeled and de-veined
3 tablespoons fresh lemon juice
1/4 cup extra virgin olive oil
3 cloves garlic
chopped salt and pepper
1/2 cup Parmigiano-Reggiano grated
3/4 cup plain breadcrumbs
Recipe
Preheat oven to 500 degrees, use convect feature if your oven has it.
In a medium bowl, combine first four ingredients and season well with salt and pepper.
Add Parmigiano and breadcrumbs and toss well to coat shrimp evenly.
Spread onto a baking sheet and cook in oven for 5 minutes or until golden brown and cooked through.
Sprinkle evenly with remaining lemon juice.
Skewer shrimps with rosemary skewers and serve right away.
