No Frying Quick Crab Cakes

1/2 lbs. Mashed Potatoes, Homestyle or Whipped
1/4 c. Baking mix
10 to 12 oz. Imitation crab, flaked or choped fine
5 or 6 Green onions, sliced
1 1/2 tsp. Old Bay Seasoning
Bread Crumbs
Nonstick cooking spray
Cajun Crab Spread, optional
Recipe
Preheat oven to 400 F.
Mix mashed potatoes, baking mix and seasoning. Add crab and onions. Stir.
Spray muffin pan with nonstick cooking spray and sprinkle lightly with breadcrumbs.
Spoon mixture into muffin cups and press down each crab cake.
Bake 15 to 25 minutes or until the edges or the crab cakes pull back from the sides of the muffin pay.
