1 cup tortilla chips -- finely crushed
3 tablespoons butter -- melted
16 ounces cream cheese -- softened
2 large eggs
4 ounces colby cheese -- shredded
4 ounces monterey jack cheese -- shredded
6 ounces pepper jack cheese -- shredded
4 ounces green chiles -- chopped
1 dash hot pepper sauce
1 cup sour cream -- room temperature
1 medium red bell pepper -- sliced
1 medium yellow pepper -- sliced
1 medium green pepper -- sliced
1 bunch scallions -- chopped
1 medium tomato -- chopped
1/2 cup black olives -- sliced
Recipe
Preheat oven to 325. In a small bowl, combine chips and butter. Press into the bottom of a 9-inch springform pan and bake for 15 minutes.
In a large bowl, beat the cream cheese till fluffy, add the eggs one at a time. Mix well. Mix in the shredded cheeses, green chilies and hot pepper sauce. Pour over the crust and bake for 30 minutes.
Cool the 'cake' slightly and spread the room temp sour cream over the top. Cool before removing the rim of the pan. Chill overnight.
Garnish with the freshly sliced veggies and serve with crackers or tortilla chips. Enjoy!
