Sausage Cheese Squares

2 pounds of bulk sausage, hot or mild
1 large onion, chopped
2 cloves garlic, minced
1/4 pound sliced mushrooms
1/2 teaspoon of each basil, mint & oregano
1/4 cup of chopped parsley
8 eggs (egg beaters can be used)
1/3 cup of bread crumbs
1/4 cup of grated Parmesan cheese
4 cups of shredded Swiss cheese
Brown and drain sausage. Mix onions, mushrooms, garlic and herbs in glass bowl. Sprinkle on 1 tablespoon water. Cover with plastic wrap and microwave on high for 1 to 2 minutes until onion is soft. Mix with sausage. Beat eggs in large bowl. Add bread crumbs, cheeses and sausage mixture. Mix well and pour into lightly oiled 10 x 15 inch baking pan. Spread out evenly. Bake at 325ºF. for 30 to 35 minutes. Mixture should feel firm in center to touch. Cool and cut into 1 inch squares - 12 1/2 dozen. Can also be cut into large squares for main entree. Recipe
