Spinach Cheese Dumplingsw/Mushroom Sauce

10 ounce - package frozen spinach
1/2 cup - swiss cheese grated
1 tablespoon - butter
1/4 cup - ricotta cheese
3 - green onions chopped
1/4 teaspoon - salt
1 pound - mushrooms
1/4 teaspoon - pepper
2 tablespoon - white wine vinegar
36 - Wonton wrappers
1/4 cup - parsley chopped
1 1/2 cup - half and half
Prepare dumplings: boil spinach in saucepan for 1 minute. Drain, press out all water. Mix spinach, swiss, ricotta, salt & pepper. Stuff wonton wrappers and place on baking sheet; cover w/ damp cloth.
Bring pot of salted water to a boil; prepare sauce by melting butter in skillet on high. Add onions, cook 2 minutes, then add mushrooms. Cook 7 minutes. Add vinegar and ½ of parsley. Cook till vinegar almost evaporates (3 minutes). Reduce to low to thicken. (About 5 minutes)
Cook dumplings in boiling water 2 to 3 minutes. Add the half & half, salt & pepper and mushrooms to the skillet. Heat, pour sauce over dumplings w/ remaining parsley.
