1½-pound pork tenderloin
1 (16-ounce) bottle Caribbean Jerk Marinade Sauce
4 cups rice
8 ounces cashews
¼ cup chopped green onions
Sesame seeds
Recipe
Combine half (8 ounces) Caribbean Jerk Marinade Sauce and pork in a large resealable plastic bag and marinate for six to eight hours. Remove pork from bag; discard marinade. Grill pork over low heat until meat thermometer inserted into the thickest part reads 160 degrees F. Remove from grill and slice into thin, bite-sized pieces. Prepare rice according to package directions. Portion rice on four plates. Top rice with pork, 1-tablespoon of remaining marinade, chopped green onion, cashews and sesame seeds to taste. Serves 4.
