    Coffee Molasses Grilled Turkey

    Marinade:
    1/2 cup hot espresso
    1/2 cup molasses
    6 tablespoons course salt
    3 tablespoons Dijon mustard
    1 tablespoon black peppercorns

    Hickory wood chips.

    Recipe



    Whisk ingredients until salt dissolves. Let the mixture cool to room
    temperature.

    Marinate the turkey overnight. Set up the grill for indirect to cooking or
    rotisserie and preheat to medium. Place the wood chips in a smoker box and run
    the grill on high until you see smoke, then reduce heat to medium.

    When ready to cook, drain the turkey and discard the marinade. Place the
    turkey on the rotisserie or on the hot grate, breast side up, over a drip pan and
    away from the direct heat. Close the grill and cook the turkey until through,
    approx. 20 minutes per pound. The internal temperature should be about
    170-degrees F.

    Transfer the turkey to a cutting board and let it rest for 10 minutes. Carve
    and serve.
