Ribeye Steaks w/Bacon-Molasses Butter

6 slices bacon
1/3 cup mild-flavored molasses
6 tablespoons (3/4 stick) butter, room temperature
Fry bacon. Allow to cool. Crumble and mix with other two ingredients. Season with salt and pepper. (Cover & chill. Can be made one day ahead.)
4 to 6 rib-eyes, about 1-inch thick.
Hardwood charcoal or hickory chips, or both
Prepare coals and wait until medium hot, when you're able to hold hand over the rill for 3 seconds. If desired, add soaked chips to coals or in pan among coals. Sprinkle steaks with salt and pepper. Grill for 4 minutes a side or until desired doneness. Top steaks with the butter and serve.
