Banana-Prune Muffins

Yields 12 muffins
1/4 cup butter or margarine, softened
1/2 cup sugar
1 egg
1 cup mashed ripe bananas (2 medium)
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
3/4 cup chopped pitted prunes
Heat oven to 375 degrees. Grease or line 12 (2 1/2-inch) muffin cups with paper baking cups.
Combine butter and sugar; beat until well-blended. Add egg and blend well. Stir in banana and vanilla.
In another bowl, combine flour, baking powder, baking soda, salt and cinnamon. Add to butter mixture, stirring just until dry ingredients are moistened. Fold in prunes.
Spoon batter into prepared muffin cups. Bake in upper third of oven for 20 to 25 minutes, or until a toothpick inserted in center comes out clean.
