Banana Honey Loaf

Yield: 1 loaf
2 1/2 cups bread flour
1/4 teaspoon ground nutmeg
2/3 cup sugar
1 tablespoon baking powder
3 tablespoons honey
6 tablespoons butter or margarine
5 tablespoons water
1/3 cup mashed bananas
Grated rind and juice of 1 lemon
1/4 cup confectioners’ sugar
1 banana, sliced
Preheat oven to 350F. Spray an 8x4-inch loaf pan with non-stick vegetable spray.
In a large mixing bowl, combine flour, nutmeg, sugar, and baking powder; make a well in the center. In a small saucepan, heat honey, butter, and water until butter melts. Stir bananas into honey mixture. Pour into flour mixture, stirring until well blended. Stir in lemon rind and juice. Pour into prepared loaf pan.
Bake for 1 hour and 5 minutes or until a tester inserted in the center of the loaves comes out clean. Cool in pan for 10 minutes. Remove from pan; cool completely on a wire rack.
In a small bowl, combine confectioners’ sugar with enough lemon juice to make of spreading consistency. Spread over top of loaf; arrange banana slices over top. Recipe
