Cheddar Date Loaf

Yield: 1 loaf
8 ounces dates, finely chopped
2 tablespoons butter or margarine
3/4 cup boiling water
1 3/4 cups self-rising flour
1/2 cup sugar
1 egg, well beaten
1 cup shredded Cheddar cheese
1 cup chopped walnuts
Spray a 9x5-inch loaf pan with non-stick vegetable spray.
In a small bowl, combine dates, butter and boiling water; let stand for 5 minutes.
In a large mixing bowl, combine flour and sugar; add date mixture, egg, cheese, and walnuts, stirring until just blended. Pour into prepared loaf pan. Let stand for 20 minutes.
Preheat oven to 325F. Bake 50 to 60 minutes or until a tester inserted in the center comes out clean. Let cool in loaf pan for 10 minutes. Remove from loaf pan; cool completely on a wire rack. Recipe
