Cheese & Onion Potato Bread

8 oz. potatoes, peeled, diced and boiled until tender, drained
3 cups bread flour
1-1/2 teaspoon active dried yeast
2 tablespoons butter, diced
1/2 cup pitted green or black pitted olives

2 tablespoons olive oil
1 onions, sliced into rings
1/2 cup grated cheddar cheese
salt & pepper to taste
Recipe
Sift flour into a bowl with yeast and a little salt.
Rub in the butter to form crumbs.
Mashed potatoes and add to along with 1-1/4 cup lukewarm water.
Work the mixture to bring it together, turn out onto a floured board and knead 5 minutes.
Return to a bowl, cover with a damp cloth and let rise one hour or until doubled in size.
Turn dough out onto a board and punch down.
Knead in the olives.
Divide the dough into three equal pieces.
Roll each piece into a long, thick rope.
Twist ropes together in braiding fashion and place on a grease cookie sheet.
Cover with a damp cloth and let rise 30 minutes or until size has doubled.
Preheat oven to 425F.
Make the topping: Heat oil in saucepan, add onion and sauté until golden (about 10 minutes). Drain on a paper towel.
Scatter onions and cheese on the top of the bread.
Bake in oven for 20 minutes.
