    Cheese and Rice Muffins

    1 3/4 c Less 1 T flour
    1 c Skim milk
    1/4 lb Shredded Cheese *
    1/4 c Oil
    1/2 c Green onions
    2 ea Egg whites
    1 T Baking powder
    1 1/2 c Cooked brown rice

    * Mozza or Romano Cheese.

    Preheat oven to 425 F.

    In medium mixing bowl combine flour, cheese, green onions,
    and baking powder; set aside.

    Using a wire whisk, in separate bowl combine milk and oil;
    add eggs and beat until combined. Stir into flour mixture;
    fold in rice (rice mixture will be lumpy; do not beat or
    overmix).

    Bake rice muffins for 15 minutes or until a toothpick
    inserted in the muffin's center comes out dry.

    These delicious cheese-rice muffins are especially good
    with soups and stews!
