Chocolate Spice Zucchini Bread

Makes 1 large loaf or 4 small loaves
Dark Cocoa
3 eggs
1-1/2 cup Canola oil
1-1/2 cup sugar
1 tsp vanilla
2 cups unpeeled, raw zucchini, coarsely shredded
2 cups flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
1 tsp. ground cloves
1/2 tsp. nutmeg
1 tsp. allspice
1 cup chocolate chips
1 cup nut pieces
Preheat oven to 350F. Grease your pans - then dust with dark cocoa (not flour). Cream eggs, canola oil, sugar and vanilla together. Add zucchini and blend well. Mix flour with baking soda, baking powder, spices and 1 tablespoon of dark cocoa. Add to zucchini mixture and blend well. Add 1 cup chocolate chips (preferably a high grade semi-sweet baking chocolate that you have chopped into pieces) and nut pieces.
Pour into greased pan(s) and bake for 1 hour 10 minutes, or until done. Cool slightly before removing from pans.
*Some of the chocolate chips will stick to the bottom of the pan - replace them in the bottom of the bread.
Note: If you break up dark chocolate and use in lieu of the chocolate chips - it will not stick to the bottom of the pan
