Chunky Apple Mini Muffins

PAM Butter Flavor Cooking Spray
2 cups reduced fat buttermilk baking mix
1/2 cup granulated sugar, divided
1 1/8 teaspoons apple pie spice, divided
1 cup chunky applesauce
1/4 cup apple juice
1 large egg
Recipe
Preheat oven to 400F. Coat 24 1 3/4-inch by 3/4-inch mini-muffin pan cups with cooking spray for 1/2 second each.
In large bowl, mix baking mix, 6 tablespoons sugar, and 1 teaspoon apple pie spice.
In small bowl, beat apple sauce, apple juice, and egg until blended. Spray cooking spray into mixture for 5 seconds; stir until blended. Stir into flour mixture just until moistened (batter will be lumpy). Spoon batter into muffin pan cups, filling almost to top of cups.
Bake 15 to 20 minutes until golden brown. Remove muffins from pan.
Icing:
In small bowl, mix remaining 2 tablespoons sugar and 1/8 teaspoon apple pie spice.
Spray tops of hot muffins with cooking spray for 1/2 second each; dip in icing.
Yield: 24 mini-muffins
