Coconut Blueberry Muffins

1 1/2 cups white flour
3/4 cup white sugar
1/2 cup shredded coconut
1/2 teaspoon salt
1 teaspoon cinnamon
1 tablespoon baking powder
1 stick butter, melted
1 tablespoon vanilla extract
1 egg
1/2 cup cream or half & half
1 cup fresh or frozen blueberries - if frozen, keep in freezer until ready to stir into batter.
Instructions:
Combine all dry ingredients, including coconut in a large bowl and stir well with spoon to thoroughly blend. Melt butter in microwave safe dish -- about 30 seconds will do it. In small bowl, mix cream, vanilla and egg. Add melted butter to wet ingredients and combine.
Pour all wet ingredients into dry ingredients and mix well to blend. Add blueberries to batter and blend gently. Drop by spoonful into muffins papers in muffin pan. Batter is quite thick and the muffin papers will be about 3/4 full. Bake in 350 degree oven for 20-25 minutes or until golden brown.
Makes one dozen muffins.
These muffins smell great -- kind of like a coconut macaroon. They are not overly sweet and are wonderful served warm.
