Colorful Zucchini Muffins

1 c. whole wheat flour
2 tbsp. wheat germ
2 tbsp. bran
1/4 tsp. baking powder
1 tsp. baking soda
1/4 c. oil
1/4 c. honey
1 egg
1/2 c. milk
1 c. grated zucchini
1/4 c. sunflower seeds
1/2 c. blueberries
Additional berries for garnish
Recipe
Combine flour, wheat germ, bran, baking powder and soda in a large bowl. Combine oil, honey, egg and milk; add to dry ingredients. Stir in zucchini, sunflower seeds and 1/2 cup blueberries. Spoon into buttered muffin tins, filling them about 2/3 full. Using 3-4 berries per muffin, dot tops with additional blueberries. Bake at 325 degrees for 25-30 minutes. Makes 12-14 muffins. They can be frozen.
