    2 cups flour
    1/2 cup sugar
    2 1/2 tsp baking powder
    2 tsp instant espresso powder (or 4 tsp instant coffee powder)
    1/2 tsp salt, optional
    1/2 tsp cinnamon
    1 cup milk, scalded and cooled
    1/2 cup butter, melted and cooled
    1 egg, lightly beaten
    1 tsp vanilla extract
    3/4 cup miniature semisweet chocolate chips

    Preheat oven to 375 degrees. Prepare 12 muffin cups. In a large bow, stir together flour, sugar, baking powder, espresso or coffee powder, optional salt and cinnamon.

    In a separate bowl, mix milk (it must be cooled or it will melt the chocolate chips!), butter, egg, and vanilla. Make a "well" in the center of the flour mixture. Pour in milk mixture and stir just until all ingredients are combined. Fold in chocolate chips. Divide batter between 12 muffin cups. Bake 15 to 20 minutes or until a toothpick inserted in the center comes out clean.
