Fruited Brown Rice Muffins

2 1/4 c whole wheat flour
3 t baking powder
1 t salt
1/4 c wheat germ
3/4 c raisins
1 c milk
1 ea egg, beaten
3/4 c cooked brown rice
2 T oil or melted shortening
Sift together flour, baking powder, and salt, and stir in wheat
germ. Add raisins, milk, egg, rice, and shortening, and blend
briskly.
Fill greased muffin tins 2/3 full and bake at 425 for 30 minutes.
Makes 15.
