2 cups water
1 cup yellow cornmeal
1/4 cup shortening
2 tbsp sugar
1 tsp salt
2 egg; beaten
1 cup evaporated milk
Combine water, cornmeal, shortening, sugar, and salt in a saucepan; cook over medium heat until mixture is thickened, stirring constantly. Remove from the heat.
Combine eggs and milk; stir into the cornmeal mixture. Pour into a lightly greased 1 1/2 quart casserole.
Bake at 425 F for 30 to 35 minutes or until a knife comes out clean.
