    List of Ingredients




    3 cups milk
    1 1/4 cups white corn meal
    3 Tbsp butter
    4 large eggs
    1 3/4 tsp baking powder
    1 tsp salt

    Directions:
    Heat milk in a heavy 3-quart saucepan to boiling. Reduce heat to low and stir in corn meal, a little at a time; stir constantly to prevent lumping or burning until very thick-about 3 minutes. Stir in butter and cool completely.

    Using an electric mixer, beat eggs, baking powder, and salt into cooled corn meal mixture; mixture will be thick and clumpy, so continue beating on high about 10 minutes. Pour into greased 2-quart casserole and bake in preheated 375 degree oven 45 minutes or until brown. Spoonbread will be brown and crusty on the outside but soft and creamy inside.
