List of Ingredients
1 cup cornmeal
1 cup flour
2 TBS sugar
2 TBS shortening
1 egg
1 small can cream style corn
1 can chili peppers or small jar jalapeno peppers
1 cup sharp cheddar cheese, grated
1 medium onion, diced
1 lb. ground beef, fried & crumbled
milk
Recipe
In a large bowl, mix together all dry ingredients. Cut in shortening. Add egg, corn, and enough milk to make a thick, cake batter like consistency. Stir in peppers, onions, and ground beef. Pour 2/3 of the batter into a heavily greased 11x14" baking pan. Sprinkle cheese over the batter being careful not to touch the sides. Add a little more milk to the remaining batter. (This step is necessary to make sure that the batter spreads easily over the cheese.) Bake at 400 for about 30 minutes or til golden brown. Since this bread contains cream style corn, it will be slightly damp even when done, resembling a bread casserole.
