    One Bowl Applesauce Nut Bread

    2 cups fruit **

    2 cups chopped nuts

    4 cups sifted flour

    1 cup sugar

    4 tsp. baking powder

    2 tsp. baking soda

    2 tsp. salt

    2-1/2 cups applesauce

    2 eggs, slightly beaten

    1/4 cup cooking oil

    Line 2 9x5x3 inch loaf pans with foil, with extra extending over the top. Grease bottoms and part way up the sides. Preheat oven to 350 degrees.

    Combine fruit and nuts. Sift dry ingredients together over fruit. Mix then add the applesauce, eggs and oil. Stir until blended and no longer. Turn into lined pans. Bake in preheated oven at 350 degrees for 1 hour or until tested done. Cool in pans for 10 minutes, lift loaves out by the foil and cool thoroughly. If you wish, leave in foil and refrigerate for easier slicing. To freeze, cover with an over wrap of foil. Makes two 2 pound loaves.

    ** Use mixed candied fruits or individual measures of favorite candied fruits: chopped dates, raisins, well drained chopped maraschino cherries or chopped raw cranberries and add an extra 1 cup of sugar.
