Orange and White Chocolate Muffins

2 cups all-purpose flour (sifted)
2 tsp double acting baking powder
1 tsp baking soda
1/8 tsp salt
8 tbs unsalted butter, melted and cooled until tepid
2 large eggs, lightly beaten (at room temp.)
2/3 cup granulated sugar
1/2 cup orange juice
1/2 tsp vanilla extract
1 vanilla bean
zest of 1 orange, finely chopped.
8 oz. white chocolate, finely chopped.
Recipe
1. Position a rack in the center of the oven and preheat to 350 F.
2. Line muffin pan with muffin cups.
3. Sift the flour, baking powder, baking soda, and salt into a large bowl.
4. Stir mixture with a wooden spoon until thoroughly blended.
5. In a med. bowl, whisk together the butter, eggs, sugar, orange juice and vanilla extract.
6. With a sharp paring knife, cut open the vanilla bean and scrape out the seeds.
7. Add vanilla seeds and the orange zest to the egg mixture and whisk until thoroughly blended.
8. With a rubber spatula, fold the egg mixture into the dry ingredients, folding only until the dry ingredients are moistened.
9. Stir in white chocolate.
10. Using two spoons, fill the muffin cups 3/4 full.
11. Bake the muffins for 16-18 minutes or until golden.
12. Cool the muffins in the pan, set on a rack.
13. When cool, store the muffins immediately in a plastic bag or airtight container.
