Peanut Butter Muffins

1/3 cup packed brown sugar
1/3 cup creamy peanut butter
1 egg
1/4 cup finely shredded carrots
3/4 cup whole wheat flour
1/4 cup rolled Oats
1 teaspoon baking powder
1/8 teaspoon salt
1/4 teaspoon baking soda
1/2 cup milk (skim is fine)
Recipe
In a medium sized bowl mix together the brown sugar and peanut butter then add the egg and beat well. Stir in the shredded carrots followed by the flour, Oats, baking powder, salt, soda, and milk. Stir just until blended. Pour into paper lined muffin cups, about 3/4 the way full. Bake for 15 to 20 minutes or until golden in a 400 degree oven.
Makes 10 muffins.
