    Pumkin Bread in a Coffee Can

    ¾ cup sugar
    1 teaspoon brown sugar
    ½ cup oil or melted butter
    2 eggs, beaten
    ½ teaspoon black walnut extract (or almond extract)
    1¾ cups flour
    1 teaspoon baking powder
    ½ teaspoon cinnamon
    1 cup cooked pumpkin, mixed with ½ cup water (canned pumpkin is OK)
    1 cup walnuts
    Mix sugars and butter together and stir in beaten eggs. Add walnut extract. Sift flour, baking powder, baking soda, and cinnamon together. Alternate adding the sugar mixture and the pumpkin and nuts to the flour. Mix well after each addition.

    Turn into 3 greased and floured 1-pound coffee cans. Bake at 350 degrees for 45 minutes or until a cake tester inserted in the center of the bread comes out clean. Cool 10 minutes, loosen the bread from the can by running a knife between the bread and the can. Open the bottom of the can with an opener and push the bread through the top of the can. Voila!

    Makes 3 breads.
