Raspberry Muffins

2 1/4 c whole wheat flour
2 t baking powder
1 ds salt
1 T sugar
1 ea egg, beaten
1 1/4 c cold skim milk
1/4 c olive oil
1 c fresh raspberries
Preheat oven to 375 F.
Mix dry ingredients together in medium size bowl.
In a small bowl blend egg, milk, and butter. Add to the dry
ingredients and mix just until lumpy.
Add raspberries, stirring gently. Do not overmix. Spoon into
greased muffin tins.
Bake for 25-30 minutes.
Makes one dozen. Serve warm with butter.
