    1 CUP OIL
    2 CUPS SUGAR
    2 TSP. VANILLA
    2 CUPS COARSELY SHREDDED ZUCCHINI
    1 8OZ WELL DRAINED CRUSHED PINEAPPLE
    3 CUPS FLOUR
    2 TSP. BAKING SODA
    1 TSP. SALT1 CUP EACH
    1/2 TSP. BAKING POWDER
    1 1/2 TSP. GROUND CINNAMON
    3/4 TSP. GROUND NUTMEG
    WALNUTS & RAISINS

    IN LARGE BOWL BEAT EGGS UNTIL FROTHY, ADD OIL, SUGAR & VANILLA. CONTINUE BEATING UNTIL MIXTURE IS THICK & FOAMY. STIR IN ZUCCHINI& PINEAPPLE. IN SEPARATE BOWL, STIR TOGETHER FLOUR, SODA, SALT, BAKING POWDER, CINNAMON,NUTMEG, WALNUTS & RAISINS UNTIL THOROUGHLY BLENDED. STIR GENTLY INTO ZUCCHINI MIXTURE JUST UNTIL BLENDED. SPOON BATTER EQUALLY INTO 2 GREASED & FLOURED 9 X 5" LOAF PANS. BAKE 350 DEG FOR 1 HOUR OR UNTIL SIDES PULL FROM SIDES OF PANS & TOOTHPICK COMES OUT CLEAN. COOL IN PANS 10 MIN. TURN ONTO RACKS TO CONTINUE COOLING. WRAP IN FOIL(KEEPS SOFT). THIS MAKES GREAT CHRISTMAS GIFTS. IT IS A RAVE AT EVERY PLACE I TAKE IT.
