Dough
6 c flour
1 pkg active dry yeast
2 teaspoons salt
2 c water
3 T oil
To shortcut the dough, some grocery stores and bakeries sell the dough pre-made.
Filling
6-7 onions, chopped
2 T Olive Oil
1/2 tbsp salt
12-14 Italian sausages out of skin
3/4 stick pepperoni, cut into small pieces (only if desired)
Recipe
Dough
In large bowl, mix flour, yeast, salt and water. Stir in oil. Knead on a floured board for 8 minutes or until elastic. Return to bowl, cover, let stand in warm place until double in size.
Filling
In skillet, saute onions in fat, stirring occasionally until golden. Add salt and stire in sausage and pepperoni. Saute, stirring occasionally and breaking up sausage until cooked.
Cut dough into 6 pieces. Roll out each onto floured, cloth covered board to 10x8 inches. Top each with filling then fold dough in on both sides and tuck in ends. Put in greased jelly roll pan (or baking pan will do) 2 inches apart, making sure that seams are underneath. Brush with fat or butter.
Bake in preheated oven at 325 for 45 minutes or until golden brown. While it bakes, baste a few times with sausage fat that comes out in pan.
