Sour Cream Oatmeal Muffins

Makes 30 muffins
2 cups quick oats
2 cups sour cream
2/3 cup unsalted butter, melted
4 eggs
2 cups light brown sugar
2 cups flour
2 tsp baking powder
2 tsp salt
1/2 tsp baking soda
1 tsp granulated sugar
Quick Oat Flakes
Preheat oven to 375 degrees. Combine oats and sour cream. Add butter, eggs, and brown sugar. Sift together flour, baking powder, salt and baking soda. Stir into wet mixture. Fill muffin cups. Top with sugar and oat flakes. Bake for 20-25 minutes.
