Super-Moist Apple Bread

2 cups whole-grain wheat pastry flour
1/2 cup brown sugar
1 tsp baking soda
1 tsp cinnamon
3/4 cup apple juice
1 tsp vanilla
2 cup granny smith apples, finely chopped
1/4 cup dark raisins
1/4 cup walnuts, chopped
Topping:
1 tsp sugar
1/4 tsp cinnamon
Combine the flour, brown sugar, baking soda, and cinnamon and stir to mix well. Add the apple juice and vanilla, and stir just until moistened. Fold in apples, raisins, and walnuts.
Coat a 9x5-inch loaf pan with nonstick cooking spray. Spread the mixture evenly in the pan. Mix cinnamon and sugar together and sprinkle evenly on top of batter. Bake at 325 degrees for 40-50 minutes, or until a toothpick inserted in the center comes out clean.
Remove the bread from the oven and let sot for 10 minutes before removing from pan. Let cool before slicing.
NOTES: Tried as muffins, better as bread.
Apple cider works wonderfully instead of plain juice; it gives more flavor. Recipe
