Triple Chocolate Bread

6 cups unbleached bread flour
1/2 cup brown sugar
1 tablespoon yeast
2 teaspoons salt
1 tablespoon instant coffee
1/2 cup dutch cocoa powder
2 cups warm milk
1/2 cup melted butter
2 large eggs
6 2/3 oz roughly chopped dark chocolate
3 1/2 oz roughly chopped milk chocolate
3 tablespoons chocolate powder
butter for glazing
Recipe
Mix 2 cups of flour, yeast, sugar, cocoa, coffee powder, salt, milk, butter, and eggs into a large bowl and stir to combine. When the mixture is well mixed, allow
to "rest" for 30 minutes. Using a wooden spoon, continue adding flour, 1/2 cup at a time until the dough can no longer be mixed with a wooden spoon. Tip the dough onto a floured surface and knead until smooth and elastic.
Place the dough in a greased bowl and allow to rise for approximately 1 hour, or until doubled in size.
Gently deflate the dough and roll out to a large rectangle. Sprinkle the dark and milk chocolate pieces evenly over the dough, pressing them into the dough carefully. Roll the dough up and divide into 2 equal pieces. Knead each piece gently to distribute the chocolate, being careful not to melt the chocolate too much. Place each piece of dough into a loaf pan that has been well greased.
Allow the dough to rise until doubled again and brush with melted butter and then sprinkle with chocolate powder. Bake at 375° F for 40 minutes. Check that the loaf is cooked through then turn out and cool on a wire rack.
