French Toast Casserole with Apples

1 c. brown sugar
1/2 c. melted butter
3 tsp. ground cinnamon, divided
3 tart apples
peeled, cored & thinly sliced
1/2 c. raisins*
1 loaf Italian or French bread
cut into 1" slices
6 large eggs
1 1/2 c. milk
1 T. pure vanilla extract
Recipe
Combine brown sugar, butter and 1 tsp. cinnamon in a 13 x 9" baking dish. Add apples and raisins; toss to coat well. Spread apple mixture evenly over bottom of bakiing dish. Arrange slices of bread on top. Mix eggs, milk, vanilla and remaining 2 tsp. cinnamon until well blended. Pour mixture over bread, soaking bread completely. Cover and refrigerate 4 to 24 hours (I leave it overnight). Bake, covered with aluminum foil, in a preheated 375o F oven for 40 minutes. Uncover and bake 5 minutes. Remove from oven. Let stand 5 minutes. Serve warm.
Makes 12 servings.
Note: I first saturate the bread with the egg mixture in a separate pan, then add soaked bread to apples, raisins, etc. Pour remaining egg mixture (if any) on top of bread. Also, use cream of instead of milk for richer French Toast.
*Substitute dried cranberries for raisins, if desired.
