    Gingerbread Pancakes w/ Peach Compote

    1 cup milk
    1 egg
    1 tablespoon sugar
    1 tablespoon oil
    2 tablespoons honey (or molasses)
    1 cup flour
    1 teaspoon baking soda
    ½ teaspoon salt
    1 teaspoon cinnamon
    1 teaspoon ground ginger
    ¼ teaspoon ground cloves

    Instructions:
    Combine ingredients in order listed in 1 quart measuring cup. Blend with wire whisk until large lumps disappear. Pour cakes from measuring cup onto hot griddle; cook until golden brown, turning only once. Top with warm Compote de Pèche and serve immediately.

    Yields 8-10 Pancakes

    Compote de Pèche:

    2 peaches peeled and chopped
    2 tablespoons melted butter
    2 tablespoons brown sugar
    1 teaspoon cinnamon
    ¼ cup Crème de Pèche - Peach Liquor

    Sauté the peaches in a mixture of the butter, brown sugar and cinnamon until tender. Add the Crème de Pèche and simmer for one minute. Serve immediately.
