    This is an old pioneer recipe from Ireland. Kids will go through a stack of potato cakes so fast that you may have to eat your share while you're cooking. Make potato cakes when the kids are in the kitchen. They may decide that it's so easy that they will take over. This is comfort food, best on a cold winter day after the hockey game on a frozen pond. The butter on the griddle gives the taste and the right saltiness to the potatoes. Next time you make mashed potatoes, make a double batch so that you have some left over for potato cakes.

    List of Ingredients




    2 cups of cold mashed potatoes
    1-1/4 cup of flour
    1/4 cup water
    Salted butter for the griddle

    Recipe



    Add the water to the potatoes to make them easy to stir. Add half the flour and mix well. Add the other half flour and mix again. You may have to add a bit more flour until the flour and potato mix is no longer sticky. Dust a work surface with flour and turn out the mix. Dust the ball with flour and roll to 1/4 inch thick. Slice the dough in rectangles about 2" wide and 4" long. Use salted butter to grease the griddle at medium heat and cook the potato cakes until golden brown. Use more butter to cook each batch. Put them on the table and stand way back.
