Pecan Buttermilk Pancakes

2 eggs
1/4 c. vegetable oil
2 TBSP sugar
1 tsp. baking soda
1/2 c. chopped pecans
2 c. buttermilk
1 3/4 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
Recipe
Heat griddle to 400�. Beat eggs, buttermilk and oil. Add flour, sugar, baking powder, soda and salt. Stir just until lumps disappear. Blend in the chopped pecans. Cook pancakes on heated griddle using 1/4 cup batter for each cake. Bake until bubbles form and edges start to dry; turn and bake on other side.
