Tall & Fluffy Pancakes

3 large eggs
1 cup flour
1 heaped tsp baking powder
1/2 cup milk
pinch salt
Recipe
First seperate the eggs, putting the whites in 1 bowl and the yolks in another. Add the flour, baking powder and milk to the egg yolks and mix to a smooth thick batter. Whixk the whites with the salt until they form stiff peaks. Fold gently into the batter. Heat a non-stick pan on a medium heat. Pour a little oil onto a paper towel and spread onto the pan. Pour some of your batter into the pan and fry for a couple of minutes until bubbles start to form, flip over and cook briefly. Makes about 12 large pancakes. Serve immediately with butter and syrup.
