Mexican Horchata

1 cup long-grain rice
4 cups milk or soy milk
½ cup sugar
1 teaspoon vanilla
½ teaspoon cinnamon

Recipe
Place the rice in a bowl with enough hot water to cover. Let the rice sit overnight. Next day, remove the water and place ½ cup of it along with 2 cups milk into a blender. Blend until the rice is ground up. Mix in ¼ sugar, ½ tsp vanilla, and ¼ tsp cinnamon. Do the same with the other half of the ingredients. Strain through a cheesecloth. Serve over ice. Makes six glasses.
