2 cups water
1 can coconut milk (14 oz)
1 can frozen pineapple-orange juice concentrate, slightly thawed (12 oz)
1 to 1 1/2 cups light rum
2 1-liter size bottles lemon-lime carbonated beverage
Recipe
In blender or mixing bowl, combine water, coconut milk and pineapple orange juice concentrate; blend well
Pour into large non-metal freezer container. Stir in rum. Cover, freeze 6 to 8 hours or until firm, stirring occasionally.
Remove from freezer 5 to 10 minutes before serving. For each serving, scoop 1/2 cup slush into 8 oz. glass: stir in 1/2 cup lemon-lime soda
