    1 lemon
    5 whole cloves
    6 whole allspice
    2 3-inch sticks cinnamon
    1 ¾-inch piece fresh ginger, cut into 3 slices
    2 qt. fresh apple cider
    2-4 Tbsp. packed dark brown sugar
    Apple slices
    Cinnamon sticks

    Recipe



    Using a vegetable peeler, remove yellow peel from lemon. On a 10-inch square of 100-percent-cotton cheesecloth, place lemon peel, cloves, allspice, the 2 cinnamon sticks, and the ginger slices. Bring up the corners of the cheesecloth and tie with 100-percent-cotton kitchen string.

    In a large non-aluminum pot, combine the cider and spice bag. Heat, stirring occasionally, over low heat until hot, about 30 minutes. Do not boil. Remove and discard spice bag. Stir in brown sugar to taste. Serve warm, garnished with apple slices and additional cinnamon sticks. Makes 8 to 10 servings
