Strawberry Syrup
2 pounds sugar
2 cups water
1 vanilla bean, split lengthwise
1 1/2 pounds strawberries, hulled
In a medium saucepot heat the sugar, water and vanilla bean until boiling. Lower temperature slightly and cook 15 minutes until it begins to thicken. Add the strawberries and simmer until it once again begins to thicken. Strain through a chinois (fine meshed sieve). Cool and place in a bottle, cover and refrigerate. To serve add chilled water to taste and ice.
Sour Cherry Syrup
2 pounds sugar
3 cups water
1 vanilla bean, split lengthwise
1 star anise
1 pound sour cherries
In a medium saucepot heat the sugar, water, vanilla bean and star anise until boiling. Lower temperature slightly and cook 20 minutes until it begins to thicken. Add the cherries and simmer until it once again begins to thicken. Strain through a chinois (fine meshed sieve). Cool and place in a bottle, cover and refrigerate. To serve add chilled water to taste and ice.
Quince Syrup
2 pounds sugar
3 cups water
1/4 cup lemon juice
2 quince
In a medium saucepot heat the sugar and water until boiling. Lower temperature slightly and cook 15 minutes until it begins to thicken. Add the quince and simmer until it once again begins to thicken. Strain through a chinois (fine meshed sieve). Place in a bottle, cover and refrigerate. To serve add chilled water to taste and ice.
