    425 oven
    greased baking sheet

    2 cups flour
    1 tablespoon baking powder
    1/2 teaspoon salt
    1/2 teaspoon cracked black pepper, optional
    4 tablespoons butter
    1/2 cup crumbled bleu cheese
    2/3 cup low-fat cultured buttermilk

    Combine flour, baking powder and salt.
    Chop butter and incorporate into the dry ingredients along with the bleu cheese.
    You can do this with either a pastry blender, two knives held together or simple with your fingers.
    Work the fat into the dry mix until mix resembles cornmeal or Bisquick.
    Stir in buttermilk until soft dough forms - do not overwork.
    Transfer to a floured work surface and knead three times by folding the dough
    over itself and, flattening and repeating - do not overwork - be gently.
    Roll or pat the dough intoa rectangle and cut out square biscuits.
    Transfer to baking sheet and bake in hot oven for about 12 minutes.
    Serve with butter, eggs & ham or soup & salad.
