4 oz edam
6 oz butter
2/3 c. walnuts, finely ground
1 Tbsp salt
1/1/2 c. All purpose flour
1 egg white, lightly beaten
Cayenne pepper
Poppy seeds
Sesame seeds
Caraway seeds
Paprika
Recipe
In a processor, process the cheese until smooth. Add the butter and cream process until fluffy. Add the walnuts, salt and flour and process until mixture starts to cohere. Place in a plastic bag, press into a flat cake, and chill 30 minutes.
Roll pastry between sheets of waxed paper. Cut into shapes with cookie cutters, approxiamately 2 inches in diameter. Spread lightly with beaten egg white, then sprinkle with the pepper, seeds, or paprika. Bake 10 minutes at 375 F or until golden. Can be frozenh and reheated.
