    1� cups plain or all-purpose flour
    � teaspoon salt
    1� teaspoons baking powder
    4 Tablespoons butter chilled and cut in cubes
    � cup chopped dried mango or papaya
    2 Tablespoons sugar
    2/3 cup of milk, plus extra for brushing

    To serve;
    1 cup clotted cream or heavy cream whipped
    2 ripe peaches pitted and sliced thinly

    A 2� inch cookie cutter
    A baking sheet, lightly greased

    Preheat the oven to 400 degrees

    Put the flour in a bowl and rub in the butter with your finger tips until the mixture looks like crumbs. Stir in the dried mangoes or papaya and sugar. Add the milk to make a soft but not sticky dough.

    Turn out onto a floured surface and pat out to about 1 inch thick. Dip the cookie cutter or the rim of a drinking glass in flour and press out as many rounds as possible. Gather the trimmings pat out again, and cut more rounds.
    Put the scones on the prepared baking sheet and brush the tops with the milk. Bake for about 10 to 15 minutes until risen and golden brown

    To serve;
    Split open the scones and spread with butter, whipped cream and peach slices ....let cool on a wire rack.
